Peanut Butter Chocolate Chip Bars

I have my family friend Norma to thank for introducing this recipe to me. Last summer when camping with them she brought some  Peanut Butter Chocolate Chip Bars out for dessert. My son Evan quickly started to devour them (much to my embarrassment!) as he couldn’t get enough of the sweet treat. Before we left he said “Mom you need to get this recipe!”. I love the combination of peanuts and chocolate, and these bars remind me a bit of a Reece’s Peanut Butter Cup.

Norma was kind enough to pass along the recipe along to me.  I’m thrilled that it is such a quick and easy recipe to throw together.  I also love that it mixes up quickly in one bowl so there’s minimal clean up.  This summer I want to try baking it in a cast iron skillet while camping  and serve it warm with ice cream. It’s  quick to bake and take before leaving on a trip thanks to its secret ingredient, a golden cake mix!

Peanut Butter Chocolate Chip Bars

1 pkg. Golden Cake Mix

2 eggs

1/3 cup oil

3/4 cup peanut butter

1 1/2 cups chocolate chips

Mix first 3 ingredients together until well blended. Stir in peanut butter and chocolate chips. Pour batter into a 9×13 inch pain and bake for 20-25 minutes at 350 F.

Let bars cool before cutting into squares. They taste great warm but have a habit of falling apart before making it to your mouth!
